Coconut Chicken Tacos
This recipe is a must have in your recipe box, and you will impress your friends with how easily and nonchalantly ( I just googled how to spell that) you make this dish. Honestly for this, the recipe is so loose, and you know I am not a big "by the book person" but I will try my best to make a real recipe that makes sense. But try and get creative with this, it can be fun I swear. I don't remember where I got this recipe, but my good friend Reaganne showed it to me, so thanks pal!
This recipe feeds about 4 people, depending on how hungry they are
Ingredients:
1 whole Rotisserie chicken (thats right, you don't have to cook anything)
1 or 2 limes
1 bunch of cilantro, roughly chopped, save some for the garnish
1 can of coconut milk
a couple pinches of cumin and some red pepper pepper flakes (of course depending on how spicy you want it, a little goes a long way)
small corn tortillas
1 red onion, small dice, for the garnish
You can also add some avocado slices on top, but I am poor so I am not adding them this time, I have in the past and it is delicious, so do as you wish
Directions:
first, with a fork, shred the chicken and put in it a medium sauce pot
then add the can of coconut milk and stir, bring to a simmer
add the lime juice and half of the chopped cilantro
make sure to taste, taste, taste as you go! Guys! It's so important!
add salt, pepper, cumin and red pepper flakes to taste
If it needs more lime, ADD MORE
Make sure you fry your tortillas, in a pan with some oil, just to get some color on them, and if you cook them too long and they get too hard and crispy then do not worry, you just made tostadas!
Make your final product look like your own! Put some onions on there and the leftover cilantro and then MANGIAMO!
