Asian Chicken Lettuce Wraps
Hello friends!
This is a very fun recipe, and it was my first time actually making lettuce wraps, and it turned out wonderfully! This recipe is extremely easy and quick for a fun weeknight meal that you can whip up in about 30 minutes, and it is super easy to double the recipe and make it for a party or a crowd! I made this as an entree, but it can also be an appetizer or whatever your little cooking heart desires.
Now I truly believe that these lettuce wraps were better than P.F. Changs, but that is for you to decide, and I am positive that you will wholeheartedly agree, especially because you can make them in the comfort of your own home and stuff them in your face where no one can judge you.
I seriously cannot wait for you all to make this recipe because it is amazing, and you can always change it up, with beef instead of chicken or maybe do some tofu! The sauce is so good, anything you put with it, will automatically be outstanding.
just some quick reminders before you get started: make sure to chop the vegetables very small so that each wrap has a consistent flavor and texture because of those beautiful veggies!
Also, the sauce is amazing, as much as I love experimenting and being creative, try not to tamper with it too much!
Okay, enough gabbing, time to get to the good stuff!
yield: serves about 4 people
Ingredients:
1 lb ground chicken
1 Tbs peanut oil
1/2 onion minced
1 cup red or green pepper, diced
1 8oz can water chestnuts, drained and minced
For the sauce: ( the best part )
3 Tbs soy sauce
3 Tbs Hoisin sauce
1 Tbs sesame oil
1 Tbs rice vinegar
1Tbs peanut butter
1 Tsp honey
2 tsp sweet chili sauce
1 clove minced garlic
1/4 tsp powdered ginger, you can also use fresh ginger if you would like to be so bold
To serve:
1/4 cup peanuts, crushed
lettuce, Romaine would most likely work the best!
Directions:
Whisk together the sauce ingredients until combined, set aside
heat 2 Tbsp peanut oil, or canola oil in frying pan. Once the pan is hot, add your ground chicken.
cook on medium heat until the chicken is starting to brown and then add the onions and cook for five minutes or until the onion is becoming translucent
Now, add the peppers and water chestnuts and cook about five minutes or until the peppers are becoming soft
add the lovely sauce you made and simmer on low heat until the chicken and the veggies are evenly heated through and coated with the sauce
serve in lettuce leaves, or you could even put it over noodles or rice!
I recommend using butterhead lettuce, green leaf lettuce or Romaine lettuce, just make sure your lettuce has large and flexible enough leaves to use as a wrap!
now I used small lettuce, mistake on my part, will use bigger lettuce in the future, but STILL so so amazing, i had about 5 of these buddies
