Cherry chocolate chip cookies

Hello all! And happy holidays!

This time of year means there will be a lot of cooking and baking and a lot of people expecting you to bring something to their holiday parties. Well this cookie is absolutely delicious, the cherries in it contrasted with the chocolate AND the salt seriously make them addictive. You will not be disappointed I swear, and it is a perfect thing to bring to a party or just keep it on the counter, and have your husband eat about 20 of them. Whichever comes first.

Okay, let’s get started!

yields: about 24 cookies

Ingredients:

2 1/4 cups of all purpose flour

1 tsp baking soda

1/2 tsp salt

1/2 cup unsalted butter, softened

1/2 cup butter flavored shortening ( such as crisco)

1/2 cup white sugar

3/4 cup brown sugar

2 eggs

1 1/2 tsp vanilla extract

1 1/2 tsp almond extract ( this is in the recipe but i didn’t have any and therefore i did not add and they turned out just fine)

1 cup dried tart cherries ( I also added some craisins, did a mixture of both)

1 bag ( yes thats right, one whole bag) of semi sweet chocolate chunks ( dark chocolate would also be swell!)

Directions:

Preheat oven to 375 degrees, grease baking sheets, and whisk together the flour, baking soda, and salt. Set aside.

mix together the butter, shortening, white sugar and brown sugar with an electric mixer in a large bowl until smooth. Add the eggs one at a time, beat in the vanilla extract and almond extract with the last egg. Mix in the flour mixture until just incorporated.

Fold in the cherries and chocolate chunks, mixing just enough to evenly combine. Drop by rounded spoonfuls onto the prepared baking sheets and top with a pinch of salt on each!

Bake in the preheated oven until browned around the edges, 11 to 13 minutes. Make sure to cool the cookies on a cooling rack.

look how filled to the brim they are with cherries and chocolate!!! Also, using a silpat baking mat has changed my life, i recommend highly.
