Easy One Pan Chicken Pot Pie

This is THE perfect recipe for a cold a rainy fall day, which is what today is so I am glad I stumbled upon this recipe as I was watching Rachael Ray this morning and I will put a link to the real recipe at the bottom! I grew up eating those chicken pot pies you buy in the freezer section and on the rare occasion that we would get them I would ALWAYS without fail, dig in way to fast and burn the heck out of my tongue. But having home made, from scratch pot pie is a real treat and something you can always count on being a win with the fam! Also, feel free to add your twist to this recipe, maybe corn, potatoes or squash might be delicious?

Another great thing about this recipe is that the biscuits that you make can be frozen, so double or triple the recipe and just have some extra biscuits in the freezer in case you want to make it again! okay lets get to the recipe!

yields: 3-4 pretty big servings

Ingredients:

for the filling:

1 onion, small dice

1 carrot, small dice

2 cloves of garlic, minced

a few sprigs of thyme. picked

1/2 cup of frozen peas

1 cup of chicken, cut into bite sized pieces

2 cups of chicken broth

2 Tblsp of flour

1 cup of butter

1/2 cup heavy cream

1 tsp dijon mustard

S+P to taste

for the cheddar biscuits:

2 sticks cold butter, cubed

2 cups self-rising flour

1/4 pound grated cheddar

Salt and Pepper

Directions:

preheat oven to 350 degrees

cook cubed chicken in skillet, I used a cast iron skillet, and make sure to season it!

put chicken aside and melt some butter in the same pan and saute the onions and the carrots on medium for about 5 minutes, until it gets some color on it

then add garlic and thyme and cook for another minute

to make a roux, add the rest of the butter and when its melted add the flour and whisk together until the flour is cooked out, then add the chicken broth and whisk

add the frozen peas and the chicken back into the pan and combine

now add the mustard and stir in the heavy cream and bring to a simmer

make sure to season to taste!

biscuits:

I have a food processor so I mixed the ingredients together in that, but do not fear, if you don’t have one, you can still make them, just have to get your hands a little dirty.

when using a food processor, put together the flour and cubed butter and salt and pepper in the machine and pulse until the butter is in small pebble sized pieces

add the water so it becomes dough like and then add the cheese and form the dough into golf ball sized balls and put on a sheet tray and into the freezer, until you need it.


When both are prepared, put the frozen biscuits on top of the filling, in an even layer so that they will rise and spread out evenly when cooking

cook for about 25 minutes, until golden brown
