Sweet Potato Hash

Hello! From my new kitchen! And my new gas stove!!!!

People wanted this recipe but honestly, I make it different every time. Sweet potatoes are very important for this hash but if all you have are regular potatoes then do not fear, it will still be delicious. This is very much a throw together what you have kind of dish, thats why it's always fun and very seasonal! It is a wonderful brunch meal for you a few of your friends and its a one pan recipe which I know, everyone loves! The one I am making is going to be with sweet potatoes because its fall! I do not know where the word "hash" originated from or what the original hash recipe actually was but I also do not care because this is divine and I call it a hash so here goes. 

about 2-3 servings

Ingredients:

2ish Sweet potatoes, peeled and diced ( they vary in sizes so just use your discretion, try and use 2 small ones)

1 onion, or red onion in my case, its all I had, small dice

Add any veggies you have, please don’t be shy or think you cant add them, you CAN

if you have tomatoes, chop them up into bit sized pieces ( I sadly did not for this recipe, but it is a great addition)

a couple eggs ( to crack on top at the end)

couple shakes of red pepper flakes

salt and pepper to taste

Directions:

Preheat your oven to about 400 degrees

Cut your sweet potatoes into a medium dice and toss with olive oil, salt and pepper and sometimes I add a little honey, just if you want to add a little more sweetness. cook in the oven for about 10-15 minutes, until they are nice and soft.

while the potatoes are cooking cut the onions or any other veggies you have, tomatoes, mushrooms, kale? sure, peppers, guys, anything, really.

So I started with sautéing the onions first on my cast iron pan, which is a great pan to use in this recipe because its oven friendly and just a lovely pan

Okay so when you have your vegetables sautéed in the pan, add your cooked sweet potatoes to the pan and cook together for a couple minutes on the stove, and adding minced garlic is never a bad idea either at this time you can add salt and pepper and red pepper flakes, also at this time you can add any herbs or greens that you have, like spinach or kale, chopped parsley or thyme you can never go wrong with!

This is the fun part, crack a couple eggs right on top of the mixture, in the pan, and put that right into the oven, with the broiler on high for only a couple minutes to cook the eggs just right! If you don’t want runny eggs, cook them for a bit longer but I love my eggs over easy so it doesn’t take long in the oven at all.

and that is it! admire what you have done, tell your friends! top it with some sriracha, chives or heck maybe some MORE red pepper flakes?
